Find the sun reflected in your dish of oil: you will be looking downwards towards it in the direction of the sun. Point the sextant towards this and use the index arm/mirror to obtain the reflected image co-incident with your direct reflection from your dish of oil.
Because the reflection from the dish of oil is exactly twice the angle of incidence your measuring twice the altitude.
Just half your measurement and you have the exact apparent altitude.
