I would start with Chapter 21 of Bowditch, "Navigational Mathematics." All the basic relationships are covered, starting from the basic definitions of geometry, working through plane trigonometry, and ending with spherical trig. There's not much else needed for modern sight reductions. Now, as to "haversines" and so on, I don't know of a text. Maybe someone else could help.
