I did not see the "latitude of the sun" column on the world chart until after I had posted. 90d- zenith height in the tables section - the latitude of the sun (in degrees as measured on the latitude scale on the chart to the right of the column) gives the latitude.
Gatty simplifies this to simply the zenith height, which makes sense with a book aimed at the novice navigator.
