Your observation about being able to write without setting down the sextant makes perfect sense! As a leftie, it never occurred to me that all those spoiled righties are inconvenienced by the dominant set-up.  Nice to think that us lefties get a win from time to time! ;-)

I have always belived that it is standard practice hold the sextant in the right hand while writing with the left. That is how I have always done it and will continue to do it.
