IPhone features for navigators

I just joined the 21st century and bought an iPhone, and would love to know if any list members know how to adjust some of the "every iPhone comes with these" Apple utilities to provide more useful information to navigators.
The (digital) clock utility allows you to specify a list of cities whose time is to be displayed. One of those "cities" is UTC. Yea!
But I can't figure out how (or if it's even possible) to make the clock display seconds as well as hours and minutes.
Also, is there any way to change the compass display (another utility app included with the iPhone) to make it display latitude and longitude in degrees, minutes, and decimal minutes rather than the default degrees, minutes, and seconds?
I was in
an Apple store a few days ago and the employee I spoke with said he didn't know. And Apple's "help" for these utilities is beyond useless -- belabors the obvious and gives no details.
