Paul, you were looking for a global geoid calculator. There's one here serving data from the standard EGM96 model which was apparently published in 1996:

For a more recent geoid model that incorporates significant improvements from recent satellite missions, there's the EGM2008 model from the NGA (the US "National Geospatial-Intelligence Agency, former NIMA)":

They've got all sorts of files you can download including detailed global datasets for the deflection of the vertical. Some of these files are rather large.
