In monitoring specialist newsgroups and lists for some years,
I sometimes see a note of this kind: which offers no insight into
the available skill set, experience, or age of the questioner, yet will
      entertain only "Professional" responses.
Here is what I can say frankly is a non-professional response.
If Craig has skills as a waiter, he could probably wait on a cruise
ship, and enquire from people on the spot as to the next step.
Or like me, he could acquire a General Commercial Radio Op
license with Radar endorsement, and try for a crew position.
He could call a cruise company or a shipping line.
I remember speaking to one or two people who got it into their head
they would like to work a ship, so they went where the ships were,
and hunted for a job - successfully. This seems like the appropriate
way - but that's just speculation, of course.
Hope it helps a little. It certainly does not hurt to hang out with
people in the line you'd like to try. Specially if you are pleasant!
