I'm speculating it might have something to do with measurements that can be represented wth two dimentional drawings and the three dimentional nature of the Zn; but, that is only a guess.
I think you're right. The time diagram gives no information about declination. Attached is your diagram with a new position for the sun added, but at a much more southerly declination. The time diagram would remain unchanged, but you can see the difference the change in declination has on the azimuth angle and azimuth. Hope that makes sense.
