Bruce-Perhaps you might compare the cooled tea to plain boiled water, which had been allowed to cool the same way. When water is boiled dissolved gasses are driven out, resulting in slightly different properties in the water remaining. You can observe this by making two sets of ice cubes. Fill one tray with tap water and freeze it. Fill the other try with boiled water, let it come down to room temperature (similar to the water used for the first tray) and then freeze the second tray. Generally the cubes made from boiled water will be much clearer, since there is less dissolved gas in them. I don't know if this would affect recovering from ripples, but would be curious to see the comparison done this way.
